Our story
CRISPY SOUL is a fusion born in the United States and brought to Paris by Houssine and Younes: ultra-crispy halal fried chicken, laid on a soft waffle. The sweet, the savory, the soul of soul food. Nothing else.

Back to the roots
Harlem, the golden age of jazz. The musicians play set after set deep into the night. When they come off stage, it's too late for dinner, too early for breakfast.
So the kitchens serve both at once: the evening's fried chicken, laid on the morning's waffles. The scorching chicken, the syrup, the warm waffle. The savory crunch, the sweet melt. A fusion that became a soul food classic: chicken & waffle.
That taste, that late-night energy, we swore we'd bring it back.
Houssine & Younes
Houssine and Younes, friends for over 15 years, raised on 90s US rap: the sound in the headphones, basketball on the TV, fried chicken on the weekend. Their dream wasn't to do like everyone else. It was to do better.
The idea obsesses them like a hook on loop: bring the real Harlem chicken & waffle here, without watering it down. Two rules set in stone. One: 100% halal, so nobody's stuck on the bench, everyone's at the table. Two: the crunch, the real deal, hand-breaded, fried to order, never left waiting under a heat lamp.
They started small. A counter, a recipe, word of mouth. And it caught on. Since then, it's one opening a year, like a mixtape that drops every summer and runs on repeat. Seven restaurants. Over fifty crew members keeping the machine running. A community growing faster than the hype.
No pointless features, no filler. Fried chicken, waffle burger, nothing else. The rest, it's the crunch doing the talking.

We fry to order, on high-end machines set to the right temperature. The result: fried chicken that's never greasy, never oily. Crispy outside, juicy inside, served piping hot.
